Even Better Brownies

Adapted from the recipe for 'Best Brownies', Cook's Illustrated Magazine, March/April 1994

Adjust the oven rack to the center position and pre-heat your oven to 350ºF.  This entree will take 30 minutes of preparation time, and will cook for 25-26 minutes.

Ingredients 

  • 1 cup (2 sticks) unsalted butter
  • 4 oz. unsweetened chocolate, coarsely chopped
  • 1-1/3 cups plain cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 teaspoons pure vanilla extract
  • 4 oz. (about 3/4 cup) good semisweet chocolate chips (I like President's Choice from Canada)

Melt butter and unsweetened chocolate together in double boiler over simmering water (or in microwave on 50% power). Set mixture aside to cool for 10 minutes.

While chocolate mixture is cooling, grease 13x9 inch baking pan. In small bowl, combine cake flour, baking powder and salt; whisk briefly to combine.

Whisk sugar into chocolate mixture. Whisk in eggs, one at a time, and vanilla extract. Gently fold in flour mixture and chocolate chips until just combined.

Pour batter into greased pan and bake 25 to 26 minutes. Cool completely on a baking rack before cutting.
