Icing

Ingredients

1/3 cup butter
1½ teaspoons vanilla essence
2 cups powdered sugar
1 - 3 tablespoons hot water
Food coloring (optional)

Melt butter in a small saucepan over a low heat.  Add vanilla and sugar.  Stir in hot water, one tablespoon at a time until smooth.  1 tablespoon of water makes thick icing, 2 tablespoons makes medium consistency, and 3 makes a great thin icing for dribbling over any number of desserts.  Makes 1½ cups.  You can add a drop of food coloring if you like.
