The Fabulous Escargot Recipe!

Escargot is a French word that means "tiny, slimy, and yummie"...

 

This wonderful recipe is from the kitchen of Swedish graphic artist Risto Klint www.ristoklint.com 

Ingredients:
  • 1 finely chopped onion
  • 4 head worth of garlic cloves, chopped finely
  • 24 large snails
  • 24 medium-sized mushrooms, stems removed and caps hollowed a little bit
  • ½ cup of chopped parsley
  • ½ cup of butter
  • ½ cup of olive oil
    • ½ teaspoon of rosemary
    • ¼ teaspoon of dried thyme
    • pinch of nutmeg
    • salt & pepper to taste
  1. Add butter and oil to a large sauce pan at medium heat
  2. When butter is melted, toss in all the ingredients!
  3. Lower the heat and simmer 30 minutes, stirring occasionally.
  4. Fill each mushroom with a snail and place them in a shallow baking dish.
  5. Spoon the garlic mixture on top of each mushroom.
  6. Cover the dish with tin foil and bake at 350° F for 30 minutes.

Serving Suggestion: Toast some white bread and remove the crust.  Cut each piece into 4 triangles.  Serve with escargot.  To drink: white wine, cold European beer, or ridiculously over-priced, bubbly mineral water.
