Green Beans Almondine

A one skillet wonder...

 

I'm married to an Indiana man who thinks there's one way, and only one way to cook green bean.  Put 'em in a pot with a couple slices of hog jowl and cook 'em until they are mush.  I delight in finding OTHER ways to cook delicious green beans.  Here's one:

Ingredients 

1 lb. fresh green beans, stems and strings removed
2 tbl. butter
2 cups chicken broth
salt and pepper

2 tbl. cornstarch
1 tbl. lemon juice
2 tbl. water

Sliced almonds

In skillet, melt the butter and lightly sauté the beans for 3 - 5 minutes on medium heat.  This will brighten their color and help them keep their crunch.  Add the chicken broth, salt and pepper to taste.  Cover and simmer for 15 - 20 minutes.  Right before you serve them, combine cornstarch, lemon juice and water.  Pour over the beans and stir.  Top with almonds.
